Kay's Cooking Corner




On your mark…get set…go! Christmas here we come! With the Thanksgiving Day celebration under our belts (so to say), our Christmas shopping is off to a running start! And boy, are the stores waiting for you with all their bargain prices and discounts!
I have never been one that wanted to save so much that I ventured out the day after Thanksgiving to stand in line at Wal-Mart at 4 in the morning. Not that I didn’t need the savings they offer, it’s just that I never felt like my kids or family needed something so bad that I should do that for them.
However, I do have a few family members that are more dedicated to their children and the monetary savings offered by doing that very thing, and so they endure. I might add that they are younger than I am also. Bless them!
Regardless, the race is on and everyone is out shopping for bargains, putting up decorations and planning parties and more family get-togethers and big dinners.
I will try to keep up the pace in my column by sharing some great recipes.
Since we have some of the best cooks in the South working for us, this year some of the women in the office are participating in a kind of recipe exchange. I usually do a lot of baking and make tins filled with my baked goodies for each family at our Christmas party. This year, severalladies are getting involved and their goodies will also be included, along with the recipe for what they baked. I can’t wait to see and taste these treats!
Below are two that I have received lately. We will be using these at our Christmas Party for work, and although I personally have not tasted these yet, they sound very interesting!
The first one is from Mikki, one of our bookkeepers. It is called Potato Candy – I can’t wait to taste this one! I have never even heard of it. I know there are a lot of things I haven’t heard of, but how this one slipped by me, I just don’t know! If anyone can top this for being unusual, please e-mail it to me!
The next one is Red Velvet Cake Balls given to me by another co-worker, Ashley Lyle, our editor. I haven’t tried these either and can’t wait to do so. They are sure sounding good! Hope you enjoy them, and thank you Ashley and Mikki for

Potato Candy
2 (1lb) boxes powdered sugar, sifted
1/2 c. hot mashed potatoes, drained
1 small jar peanut butter
Mix sifted sugar into potatoes a little at a time by hand. Don’t panic when potatoes liquify as the first sugar is added. This is what it’s supposed to do. Just keep adding sugar until it is pastry consistency. Sprinkle wax paper with additional powdered sugar. Take baseball-sized ball of

mixture and roll out like pastry. Spread with peanut butter and roll like a jelly roll. Wrap rolls in plastic wrap; chill and slice to desired size.
Red Velvet Cake Balls
1 box red velvet cake mix (cook as directed on box for 13 X 9 cake)
1 can cream cheese frosting (16 oz.)
1 package chocolate bark (regular or white chocolate)
wax paper
Bake cake according to package directions. After it has cooled completely, crumble into large bowl. Mix thoroughly with 1 can cream cheese frosting. Roll mixture into quarter size balls and lay on cookie sheet. (Should make 45-50.) Chill for several hours. Melt chocolate in microwave per directions on package. Roll balls in chocolate and lay on wax paper until firm.
