New executive chef at Porter’s Steakhouse

Bill Thompson has been named the new executive chef of Porter’s Steakhouse, located at the historic Sheraton Read House. He brings a fresh perspective and over two decades of experience to one of the city’s most distinguished fine dining restaurants.

Thompson began his culinary career in a European style apprenticeship run by the American Culinary Federation. He spent three years training and learning advanced techniques, providing a strong foundation to what great food is all about and the dedication it takes to achieve it. Thompson was part of the opening team at the AAA Diamond Ritz-Carlton in Sarasota, where he served as Garde Manager Chef. From there, he worked as a banquet chef at the Loews Hotel at the Den CeSar Beach Resort in St. Pete Beach, Fla., cooking for over 300 weddings a year in addition to corporate and social events.

Thompson returned to Sarasota as executive chef of the John and Mable Ringling Museum of Art and fine dining restaurant, catering events of up to 1200 guests on 60+ acres of museum grounds.

Thompson comes to Porter’s directly from New Orleans, where he served as banquet chef for the Loews New Orleans Hotel. There, Thompson had the opportunity to work with local cuisine, and was guided by classic French and Creole restaurants while working alongside modern NOLA chefs such as Emeril, John Besh, and Tory McPhail.

Jen Prpich, general manager of Porter’s and Sheraton Read House, believes Thompson’s European style training and attention to fresh ingredients and makes him the perfect fit for Porter’s. “We want our guests to come to Porter’s and enjoy the same flavors they’ve always loved, but with a fresh perspective,” said Prpich. “Chef Bill brings exactly what we are looking for: invaluable experience, unique ideas, and top quality cuisine that will keep our guests coming back for more.”

Thompson and his wife, Laura, have four children. Thompson says his family has been a tremendous influence throughout his career. Although they are his toughest and most honest critics, they have taught him more than how to cook; they have taught him how to live.
